Ingredients for 4 servings:
  • 1 green chilli
  • 2 spring onions
  • 5gcapersa
  • handfull of parsley
  • 25g coriander
  • 1 garlic clove
  • 10g lemon juice
  • 500 g of green olives 
  • 100 g of shelled/peeled almonds 
  • 100 ml of olive oil 
  • 1 tbsp of capers 
  • 1 clove of garlic 
  • salt 
  • black pepper
Saute nuts until thoroughly browned, grind in food processor.  Grind pitted large green olives. Combine ingredients in food processor, add enugh extra virgin
olive oil to make smooth.  Serve as a pasta dressing or
with toasted Italian bread.
